I have to admit, as much as I love to eat healthy, I also have a very impulsive, almost uncontrollable daily desire for sweets. I can't help it. I blame it on the American half of my genes. The German half comes in handy in terms of
punctuality, and reliability. However the German engineering gene got lost during the production process. I have to ask my parents what went wrong there. Anyway, where was I ? Oh right, sweets...
I woke up early this morning, and was craving orange juice, and pancakes. And since this combination has been working so well for generations, why not combine these two delicious things. So I simply added my orange juice to my pancake batter.
I mean, a girl needs her vitamin c, and this gives me the perfect excuse for a second helping. They turned out delicious. The American girl inside of me needed more calories, so I added salted butter, and syrup on top, Here's the recipe:
2/3 cup orange juice
1 cup milk
2 cups all purpose flour
2 tsp grated orange zest
4 tbsp brown packed sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 eggs (medium sized)
Add all ingredients to a bowl, and stir briefly with a fork until everything is well combined. Don't overmix the batter, or your pancakes will get chewy. Heat the oil in a pan over medium heat. Once the oil is hot, add some of the batter to it.
Once the batter makes bubbles, flip the pancake, and wait for it to turn golden brown. In case your pancakes are too dark on the outside, and still raw on the inside, reduce the heat. That usually does the trick.
